Sonic Boom Cookies














In honor of Felix Baumgartner successfully skyfalling from space and to acknowledge my own brave jump to learn how to become a Vegan - I am so excited to share with you a recipe I developed!  The 'Sonic Boom' cookie!

I believe the entire batch of 2 dozen cost approximately $5. (21 cents each...grab a few for your commute or late afternoon tea break) Not bad at all!

Don't you just love all the goodness that goes into these groovy treats!

Sonic Boom Cookies 
(Direct to you from the Home Ec. Dept. inside the Embassy of Ideas)

350 degrees 20-25 minutes
on sprayed pan or parchment paper

2 cups quick oats
1 cup brown rice flour
1 cup spelt flour
(If you prefer use gluten free flour of your choice)
1 cup sunflower seeds
1 cup pumpkin seeds
1/2 cup shredded coconut
1/2 cup dark chocolate or carob chips
1 tsp. cinnamon
1 tsp. sea salt
1 cup raisins
1 cup dried cranberries
1/4 cup sesame seeds
1/4 cup flax seeds
1/2 cup walnut pieces
1/2 cup blackstrap molasses
1/2 cup maple syrup
1 tsp. vanilla
1/3 cup oil (canola or safflower or coconut oil)
1/4 cup cool water or soy milk or rice milk - enough to make the batter clumpy and moist/wet.

Mix dry ingredients
Mix wet ingredients
Fold together

Keep adding dribbles water if needed to form balls and press into cookies.
I made mine quite chubby and substantial!

Bake! Eat with tea!
